Chicken Shawarma with Tabbouleh and Village Food Lebanese Rice

Lebanese Arayes are a delightful fusion of crispy pita bread and a savory meat filling, grilled to perfection. This traditional dish offers a burst of rich flavors in every bite, making it a favorite for any occasion.

Ingredients

  • Village Food Lebanese Rice
  • Village Food Tabbouleh

For the Chicken Shawarma

  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup plain yogurt
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tsp ground cumin
  • 2 tsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp ground allspice
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste

Prepare the Chicken Shawarma:

  1. In a large bowl, mix the yogurt, olive oil, minced garlic, lemon juice, ground cumin, ground paprika, ground turmeric, ground coriander, ground allspice, cayenne pepper (if using), salt, and pepper.
  2. Add the chicken thighs, ensuring they are well coated with the marinade.
  3. Cover and refrigerate for at least 2 hours, preferably overnight.
  4. Preheat the grill or oven to 400°F (200°C).
  5. Grill the chicken thighs for 5-7 minutes on each side, or until fully cooked and nicely charred. Alternatively, bake in the oven for 25-30 minutes, turning halfway through.
  6. Once cooked, let the chicken rest for a few minutes, then slice into thin strips.

Assemble and Serve:

  1. Serve the sliced chicken shawarma with a generous portion of Village Food tabbouleh and Village Food’s Lebanese rice on the side.
