Chicken Shawarma with Tabbouleh and Village Food Lebanese Rice

Ingredients

- Village Food Tabbouleh
For the Chicken Shawarma
- 2 lbs boneless, skinless chicken thighs
- 1/4 cup plain yogurt
- 1/4 cup olive oil
- 4 cloves garlic, minced
- Juice of 1 lemon
- 2 tsp ground cumin
- 2 tsp ground paprika
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp ground allspice
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper to taste

Prepare the Chicken Shawarma:
- In a large bowl, mix the yogurt, olive oil, minced garlic, lemon juice, ground cumin, ground paprika, ground turmeric, ground coriander, ground allspice, cayenne pepper (if using), salt, and pepper.
- Add the chicken thighs, ensuring they are well coated with the marinade.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill or oven to 400°F (200°C).
- Grill the chicken thighs for 5-7 minutes on each side, or until fully cooked and nicely charred. Alternatively, bake in the oven for 25-30 minutes, turning halfway through.
- Once cooked, let the chicken rest for a few minutes, then slice into thin strips.
Assemble and Serve:
- Serve the sliced chicken shawarma with a generous portion of Village Food tabbouleh and Village Food’s Lebanese rice on the side.
